Alfalfa Microgreens Growing Guide — India

✍️ Sonia Pardasani, Co-founder BageechaBox  |  🕐 6 min read  |  🌱 Variety Guide

Alfalfa microgreens are one of the most nutritionally impressive varieties you can grow — small, delicate, and mild in flavour, but extraordinarily rich in Vitamins K, C, and A, along with calcium, iron, and plant proteins. They're also one of the more forgiving varieties for beginners — fast to germinate, low-maintenance, and harvested early before they have time to develop problems.

Nutritional Highlights

  • Vitamin K: Bone health and blood clotting
  • Vitamin C and antioxidants: Immune support and cell protection
  • Plant-based protein: Rare in a microgreen — valuable in vegetarian diets
  • Calcium and iron: Essential minerals often lacking in Indian vegetarian diets
  • Phytoestrogens: Mild hormone-balancing properties

Growing Guide at a Glance

  • Difficulty: Easy ⭐
  • Soaking: Yes — 4–6 hours
  • Quantity per 10x10 tray: 6g (less than most — these seeds spread wide)
  • Blackout period: 2–3 days
  • Harvest: Day 7–10
  • Best season: Year-round; moderate temps (18–28°C) ideal

What You'll Need

  • Alfalfa microgreen seeds (available from BageechaBox — 6g per 10x10 tray)
  • Shallow growing tray
  • Moist cocopeat (wrung out well — alfalfa is sensitive to overwatering)
  • Cover tray for blackout
  • Fine mist spray bottle

Step-by-Step Growing Instructions

Step 1 — Soak Seeds (4–6 Hours)

Alfalfa seeds are small and soak quickly. Use room temperature water for exactly 4–6 hours — no more. Over-soaking causes seeds to crack and reduces germination rate. Drain thoroughly before sowing.

Step 2 — Prepare Cocopeat

Soak discs, then wring out until barely moist. Alfalfa is more sensitive to overwatering than heavier varieties — use less water in the cocopeat than you might think necessary. Spread evenly and press flat.

Step 3 — Sow Seeds

After soaking and draining, spread alfalfa seeds evenly across the cocopeat. They are very small — use only 6 grams per 10x10 tray. Press gently to ensure contact with the cocopeat surface. Mist very lightly — just a single pass.

Step 4 — Blackout Phase (Days 1–3)

Cover and leave undisturbed. Alfalfa germinates reliably within 2–3 days. The sprouts will be very pale and thin at first — this is completely normal and not a sign of failure.

Step 5 — Light Phase (Days 3–7)

Once 1–1.5 inches tall, uncover and place in indirect light. Alfalfa greens up beautifully within 24–48 hours of light exposure. Bottom water gently — alfalfa roots are delicate and will dislodge if watered from above.

Step 6 — Harvest (Days 7–10)

Harvest when stems are standing upright and the first leaves are green and fully open. Cut just above the cocopeat. Rinse gently — alfalfa is delicate and will bruise if handled roughly. Store in an airtight container in the fridge. Shelf life: 5–7 days.

Tips for Indian Conditions

  • Summer (above 38°C): Move to a cooler, shaded location. Alfalfa performs best below 35°C. Still growable in summer — just needs a cooler corner.
  • Monsoon: Increase airflow significantly. Alfalfa's dense, fine growth traps humidity and can develop mold faster than coarser varieties. Bottom-water only.
  • Winter: Ideal growing season. Alfalfa thrives at 18–25°C and produces its crispest, most flavourful shoots in cooler weather.

How to Use Alfalfa Microgreens

  • Salads — an excellent mild base green that lets other flavours shine
  • Sandwiches and wraps — replaces or supplements sprouts with better texture
  • Dal or soup garnish — added fresh just before serving
  • Fruit chaat — mild enough to mix without overpowering
  • Green smoothies — blends without bitterness, adds nutrition silently
  • Avocado toast or eggs — a nutritious topping with delicate crunch

Common Mistakes

  • Overwatering: The most common failure with alfalfa. Use less water than you think you need. Bottom water sparingly and let the cocopeat breathe between waterings.
  • Too many seeds: More than 8g on a 10x10 tray creates overcrowding, reduces airflow, and increases mold risk. 6g is the right amount.
  • Watering from above: Alfalfa roots are very fine and shallow. Top watering dislodges seedlings. Always bottom-water from Day 3 onward.

⚡ Key Takeaways

  • Soak 4–6 hours — no longer or seeds crack
  • Use only 6g per tray — less is more with these fine seeds
  • Cocopeat should be on the drier side — overwatering is the #1 failure
  • Always bottom-water after Day 3 — top watering dislodges roots
  • Harvest Day 7–10; mild flavour suits almost any dish
