Microgreens have been called superfoods, and for once the label is justified by science. These young seedlings ā harvested just 7ā14 days after germination ā contain nutrient concentrations that far exceed their mature counterparts, often by a factor of 4 to 40. But are they safe? Which ones? And what do the actual studies say? This guide covers everything Indian families need to know.
Benefit 1: Extraordinary Nutrient Density
The landmark study by the USDA and University of Maryland, published in the Journal of Agricultural and Food Chemistry (2012), tested 25 commercially grown microgreen varieties. All 25 had significantly higher nutrient concentrations than their mature counterparts. The researchers measured vitamins C, E, K, beta-carotene, and lutein+zeaxanthin ā across all varieties, microgreens outperformed mature plants, in some cases by a factor of 40.
The reason is biological: a seedling at the cotyledon stage is in its most metabolically active state, drawing on all the energy stored in the seed and using photosynthesis to build its nutrient stores at maximum rate. This is the peak moment of nutrition in the entire life of the plant.
Benefit 2: Immune System Support
Microgreens are among the richest sources of Vitamin C available in the plant kingdom at their stage of growth. Radish microgreens, for example, contain significantly more Vitamin C per gram than mature radish. Vitamin C is essential for immune cell function, collagen synthesis, and iron absorption. Daily microgreen consumption can meaningfully contribute to meeting daily Vitamin C requirements, particularly for vegetarians who may not eat enough citrus.
Benefit 3: Heart Health
Multiple cruciferous microgreens ā particularly broccoli, kale, and radish ā are high in compounds (glucosinolates and their derivatives) that have been shown in studies to reduce LDL cholesterol oxidation, lower blood pressure through nitrate content, and support healthy endothelial function. A 2016 study in the Journal of Nutritional Biochemistry found that high-glucosinolate brassica microgreens fed to mice significantly reduced LDL cholesterol and liver weight compared to a control group.

Fenugreek (methi) microgreens ā deeply familiar to Indian cooking ā have been studied specifically for blood glucose modulation. Fenugreek seeds are already well-established for their role in managing type 2 diabetes; microgreens of the same plant contain the same beneficial compounds (4-hydroxyisoleucine and soluble fibre) in concentrated form. Studies on fenugreek sprouts and microgreens show measurable reductions in postprandial (post-meal) blood glucose in diabetic patients.
Benefit 5: Anti-Inflammatory Properties
Chronic inflammation is now understood to be a root driver of most lifestyle diseases ā diabetes, heart disease, metabolic syndrome, autoimmune conditions, and cancer. Microgreens are rich in polyphenols, flavonoids, and carotenoids ā all of which have demonstrated anti-inflammatory effects in laboratory and clinical studies. Consuming a variety of microgreens daily provides a broad spectrum of these compounds.

In a city like Delhi, where air pollution and processed food exposure are daily realities, regular chlorophyll intake is particularly meaningful.
